Bees and honey: a fascinating world to discover with us!

We started honey production out of our interest and curiosity about bees. They are valuable not only for honey production but also for their role as pollinators.

Firstly, we were captivated by their fascinating world (the queen, worker bees, guard bees, drones, foraging bees, etc.): a system with delicate balances.

A possible extinction of bees would affect the entire planet and for these reasons they are part of our eco-sustainable policy that is part of the philosophy of our farm.

The honey produced in our area is particularly pure thanks to the low level of pollution and the complete absence of intensive farming, which typically involves a multitude of chemical treatments.

After attending specific courses at the APAS in Sondrio, in 2016 we welcomed the first 4 beehives, with which we produce excellent multi-flower honey. We sell this honey at our farm, and it is also used in the kitchen of our restaurant.

Traditional dishes

In our company, seasonally, we also produce small fruits and vegetables that are used in the restaurant’s kitchen.

After expanding our apiary over the years to about 25 hives, we decided in 2023 to move some of our hives to an altitude above 1,000 meters during the summer. This allowed us to produce excellent mountain wildflower honey, further diversifying the quality of our products.

The bees in our area produce honey for our production in the months of June and July, mainly collecting nectar from lime and chestnut trees.

We take care of our bees all year round, checking their health and constantly feeding them as needed.

How honey is obtained

Once the honeycombs have been taken to the honey extraction room, the first step is to extract the frames and, once placed on a special tank, they are uncapped.

They are then placed in the centrifuge, which after reaching the full capacity of 9 frames, is turned on and thanks to the centrifugal force, the precious honey is pushed out of the cells.

After an initial filtration, the honey is placed in the maturing tanks, stainless steel drums with a capacity of 200 kilos where the honey is left for about two weeks.

The last particles of wax present in the honey rise to the surface and the honey is ready to be bottled and labelled.
